Oven-Fried Chicken

A great recipe to use with Heritage Breed chickens.

Ingredients

  • 1/2 cup cornmeal
  • 1/2 cup all purpose flour
  • 1 tsp salt
  • 1 and 1/2 tsp chili powder
  • 1 tsp Italian seasoning
  • 1/4 tsp pepper
  • 1 chicken cut up
  • 1/2 cup milk
  • 4 tbsp butter

Instructions

  • Combine the first 6 ingredients
    1/2 cup cornmeal, 1/2 cup all purpose flour, 1 tsp salt, 1 and 1/2 tsp chili powder, 1 tsp Italian seasoning, 1/4 tsp pepper
  • Dip the chicken in milk then roll it in the cornmeal mixture
    1 chicken cut up, 1/2 cup milk
  • Place in a greased 13 x 9 2 baking dish
  • Drizzle with the butter
    4 tbsp butter
  • Bake uncovered at 375º for 50 – 55 minutes
